Derek's Turkey Chili

  1. Dice the sweet potato, zucchini, and bell pepper. Put it in a large bowl.
  2. Rinse the beans and drain them. Put them in the same bowl.
  3. Place a large pot (cast iron is best) on the stovetop, add avocado oil (or whatever) and set to medium-high heat.
  4. Chop the onion and throw it in the pot.
  5. Add the package of ground turkey to the pot.
  6. Add salt, chili powder (a decent amount), and some ground cayenne to the meat. Sauté meat and onion until meat is no longer pink.
  7. Add the chopped ingredients and beans from earlier to the pot.
  8. Add half a cup of water to the pot. (Add corn at this point if you want.) Stir.
  9. Reduce heat to medium-low and simmer for like 40 min.

Result

Makes ~6 mason jar sized servings. Can be stored in the fridge for probably 4-5 days.

Eat with rice and/or tortilla chips.
