Derek's Turkey Chili

Ingredients
- 1 package of ground turkey (1 lb)
- 1 can of black beans
- 1 can of kidney beans
- 1 can of diced tomatoes
- 1/3 cup (or so) of salsa
- 1 medium sweet potato
- 1 zucchini
- 1 small sweet onion (or half a large one)
- 1 red (or any) bell pepper
- salt
- chili powder
- ground cayenne
- (optional) some frozen corn
Instructions
- Dice the sweet potato, zucchini, and bell pepper. Put it in a large bowl.
- Rinse the beans and drain them. Put them in the same bowl.
- Place a large pot (cast iron is best) on the stovetop, add avocado oil (or whatever) and set to medium-high heat.
- Chop the onion and throw it in the pot.
- Add the package of ground turkey to the pot.
- Add salt, chili powder (a decent amount), and some ground cayenne to the meat. Sauté meat and onion until meat is no longer pink.
- Add the chopped ingredients and beans from earlier to the pot.
- Add half a cup of water to the pot. (Add corn at this point if you want.) Stir.
- Reduce heat to medium-low and simmer for like 40 min.
Result
Makes ~6 mason jar sized servings. Can be stored in the fridge for probably 4-5 days.
Eat with rice and/or tortilla chips.
